Carnation Cook Book [1945]

Description
The pamphlet has a plastic protector over the cover which has a lace doily background. The title and author's name are in red, green and white on a diamond-shaped solid panel on the doily. The title page is green and white with Carnation in white on a green background at the top. Cook Book is in black and green on the green and white backgrounds above the author's name in black. Below is a green and white picture of a picnic basket with fruits and vegetables above the company name, addresses and copyright information. The first page has a letter from Mary Blake, Director, Home Economics Department, Carnation Company, followed by a Table of Contents. A four-page introduction describes what irradiated Carnation Milk is, what it does and how to use it. There are rules for measuring and temperatures for baking, frying, making candy and jelly, and "For Simple Rules of Meat Cookery": how to broil, braise, roast and "boil." There are recipes for appetizers, cocktails, soups, entrees, vegetables, meats, poultry and game, fish, salads and salad dressings, pastry, cakes and cookies, desserts, confections, breads, sandwiches, sauces, beverages, garnishes and international dishes. There are several pages of menus for special occasions and holidays, for feeding children and feeding invalids. There are also recipes for children and invalids. There are two pages of Cookery Hints followed by an index. There are several full-page color photographs of recipes and recipe pages have headings at the top and line drawings at the bottom in blue, green or pink.
